
Quite often I find myself scouring through my kitchen cabinets for food I can cook up and enjoy in between classes, or when taking a break from studying. Finding something to eat is even tougher when I'm taking a break from those 17 cent packages of noodles, which are only satisfying for so long until they begin to have absolutely no effect on my stomach's appetite. As a student on a budget, I buy food items that are inexpensive, yet I buy with the intentions of making a meal that will last throughout the week. Last week, my roommate had a great idea of combining a few items together to make what I will oh-so-cleverly call Meat, Rice and Veggie Combination. This meal is perfect for the busy, budgeting student. These are the ingredients my roommate used:
1 package of ground beef
1 box of rice
1 can of corn
Various seasonings
Step 1:
Place the beef in a pan and set on medium heat. Add seasonings of your choice. Stir the meat until it is medium-brown.
Step 2:
Follow the directions on the rice box to prepare the rice.
Step 3:
Open the can of corn. Pour the corn into a microwave-safe bowl. Cover the bowl loosely with its container lid. Microwave for about 2-3 1/2 minutes.
Once each item is finished cooking, combine all the foods together in a pan or large mixing bowl. And there you have it; a meat, rice, and veggie combination that can last, if refrigerated, until the end of the week. The combination lasted about three or four days between me and my roommate.
